Shredded Chipotle Beef
This beef recipe is full of flavor and super easy to make. I like to pair it with cilantro lime rice, avocado, pico de gallo, and some cotija cheese.
Ingredients:
3lb chuck roast
Salt, pepper, garlic powder
Olive oil
2-3 bay leaves
Braising Liquid Ingredients:
2 cups beef broth
3-4 chipotles in adobo sauce (you can add more if you want it to be spicier)
1-2 tbsp adobe sauce
1 tbsp minced garlic
2 tbsp apple cider vinegar
Juice of a lime
Cumin, oregano, garlic powder, salt pepper to taste
Directions:
Mix all the ingredients for the braising liquid in a blender and set aside.
Pat chuck roast dry and season heavily with the salt, pepper, and garlic powder.
Cook the roast on a skillet for 3-4 min per side on medium-high heat.
Put some of the braising liquid in the bottom of a crock pot. Add the roast and top with the rest of the braising liquid.
Cook on for 4-6 hours, or low for 6-8 until tender and can be shredded with a fork.
