Shredded Chipotle Beef

This beef recipe is full of flavor and super easy to make. I like to pair it with cilantro lime rice, avocado, pico de gallo, and some cotija cheese.

Ingredients:

  • 3lb chuck roast

  • Salt, pepper, garlic powder

  • Olive oil

  • 2-3 bay leaves

Braising Liquid Ingredients:

  • 2 cups beef broth

  • 3-4 chipotles in adobo sauce (you can add more if you want it to be spicier)

  • 1-2 tbsp adobe sauce

  • 1 tbsp minced garlic

  • 2 tbsp apple cider vinegar

  • Juice of a lime

  • Cumin, oregano, garlic powder, salt pepper to taste

Directions:

  1. Mix all the ingredients for the braising liquid in a blender and set aside.

  2. Pat chuck roast dry and season heavily with the salt, pepper, and garlic powder.

  3. Cook the roast on a skillet for 3-4 min per side on medium-high heat.

  4. Put some of the braising liquid in the bottom of a crock pot. Add the roast and top with the rest of the braising liquid.

  5. Cook on for 4-6 hours, or low for 6-8 until tender and can be shredded with a fork.
