Baked Oatmeal
This is one of my all-time favorite recipes to make for overnight guests. It’s quick to whip together in the morning and is so cozy-yummy. My mom got this recipe over 20 years ago from a church cookbook. She used to make this before my volleyball tournaments as a teenager so that I had energy to play well. Every time I make this recipe, I’m reminded of those good times playing volleyball, and also all the wonderful guests I’ve made it for.
Ingredients:
1/2 cup canola oil
1 cup sugar
2 eggs
3 cups quick oats (uncooked)
2 tsp. baking powder
1 cup milk
1 tsp. cinnamon
You can add fruit if you wish like apple or banana, I don’t personally
Instructions:
Mix oil, sugar, and eggs in a large mixing bowl with a whisk.
Add quick oats, baking powder, and milk. Mix thoroughly.
Pour into a lightly greased 9-inch pan.
Bake in a 350-degree oven for 30 minutes.
Enjoy it warm! I prefer it “dry,” but some people like to add milk to it.
