Double-0 Pizza Dough
This recipe makes enough dough for two medium-sized pizzas.
Ingredients:
1 1/3 cup warm water
2 1/4 teaspoon yeast
1 tablespoon brown sugar
1 teaspoon sea salt
1 teaspoon pizza seasoning
1 cup unbleached whole wheat flour
2 1/2 cups '00' flour
Instructions:
Mix water, yeast, and brown sugar. Let it rest for 5 minutes.
Add unbleached flour, salt, pizza seasoning, and '00' flour.
When mixed completely kneed for 5 minutes then put the dough in a bowl with a light cover of olive oil cover. Let it rise for 60 to 90 minutes or double in size. Punch down and divide into 3 or more balls.
On a floured surface flatten the dough into a circle. When you have the right size move the dough to the pizza peel with cornmeal on it. Drizzle olive oil on the dough and add your favorite toppings.
Cook in oven at 425 degrees until the pizza is done (about 10 minutes) or use this same recipe on your outdoor pizza oven.
